Edamame or cha mame?

Did you know there are different kinds of Edamame? Those popping beans come in different shapes, sizes and flavors. The most interesting bean to me is called "cha mame" which can be smaller, flatter with a slight brown color. It's easily confused to the naked eye as an edamame gone bad, but in fact has tons of flavor! I find chamame to have a deeper more complex flavor than the more commonly found green edamame.  We don't sell chamame, but next time you see it on a menu at a traditional Japanese restaurant, give it a try!

 

We season our bright green super fresh edamame pods with maldon salt (super cheffy, I know) and a Japanese purple Shiso seasoning. It has a nice tangy salty sourness to balance the sweet crunchiness of the beans. I recommend consuming with a nice light lager at home. Speaking of which- we are hoping to have a liquor license soon. (It only took 2,000 years to get it processed).
