Carbonara at a Japanese Restaurant?

Who would guess that carbonara would make it onto a Japanese restaurant menu? Well, it's insanely delicious and there is some cultural validity to it too. Carbonara is actually one of the most popular western noodle dishes in Japan and goes really well with our freshly made thick udon noodles. We combine traditional Italian flavors such as bacon, egg, black pepper and Parmesan cheese, but then we bring Japanese ingredients in too, such as our onsen tamago (soft boiled egg), a hint of miso sauce to increase the umami factor and sprinkle some scallions on top.

The result is a creamy, cheesy umami flavor bomb, think grown up mac and cheese! All of these flavors mixed in with our house made udon.

Carbonara as a dish in Japan is more common than you might think, almost every modern udon shop has it because it's just that popular! We think Washington Heights' udon shop, Tampopo Kitchen, should have one too.
