Guess how long raw salmon has been consumed in Japan?

A) Since 1650

B) Since 1875

C) Since 1985

If you thought, anything but C), you are wrong! It's 1985, isn't that wild? Tuna, yellowtail and almost all of the other common fish found at a sushi restaurant have been consumed for centuries, but raw salmon on a Japanese sushi menu is a modern invention!

The salmon in Japanese waters contained a parasite called Anisakias (wut??) so it had to be cooked. In 1985, Norway was looking to increase its international exports, and because its salmon did not contain any parasites, they were able to serve it raw, and at the time, the largest consumer of raw fish was Japan, thus raw salmon sushi was born! Raw salmon sushi is actually Norwegian, and is now the most popular item on a sushi menu in Japan!

Now, there are many producers internationally that can produce safe raw salmon, and the demand for it has reached far beyond the borders of Japan.
